拔絲地瓜

 

料:地瓜半顆、冬粉1束、香菜2根、白芝麻2T

麵糊:雞蛋1/2顆、太白粉1/ 3C 、麵粉1/ 3C

調味料:細砂糖1/ 2C

製作過程:

1.   地瓜切滾刀塊

2.   地瓜與麵糊拌勻

3.   冬粉攤開→炸至膨脹後撈起→壓碎→平鋪在成品盤底部

4.   炸地瓜→全熟後撈起

糖:水(31)放在鍋中炒→炒至有糖色→放入白芝麻、香菜、地瓜→炒均勻→放上鋪好冬粉的盤子
