東安土雞



東安土雞

所需材料:
1. 雞腿 ... 2隻
2. 蔥 ... 3支
3. 薑 ... 1小塊
4. 辣椒 ... 3支
5. 鹽 ... 1/3大匙
6. 太白粉水 ... 1大匙
7. 雞油 ... 1茶匙
8. 高湯 ... 2杯
9. 油 ... 3杯

調味料(A):
1. 味精 ... 1小匙
3. 醋 ... 11/2大匙
4. 米酒 ... 1/3小匙
5. 花椒粉 ... 1/3小匙
6. 水 ... 2大匙

做法步驟:
1. 雞腿去骨,切3x0.5公分條狀;A料切3公分長細絲。
2. 炸油燒至5分熱,放進雞肉炸至6分熟,撈出備用。
3. 鍋中留油1小匙燒熱,放下A料,以中火翻炒數下,加入B料及雞肉一起煮約5分鐘。
4. 至湯汁收乾,加入太白粉水勾芡略炒,澆淋雞油,炒勻即可。

備註:
1.這道菜不可加麻油,否則會失去原有的風味。
2.雞腿肉質鮮美,富含多量優良蛋白質,是極好的保健食品。
