滷味

                           醬汁滷味                                

材料:雞翅.機腳.肉皮.內臟....... 

中藥:(陳皮.花椒.丁香.桂皮.月桂葉.八角.大茴香.乾薑.草果)共20元紗布包起

先將所有材料進行川燙(肉皮要削到無油)

煮汁:油炒糖(油放多一點)半杯冰糖.小火炒至咖啡色

           加6杯水先加1杯水炒過再加5杯水醬油半杯粗鹽1大匙半

           加入中藥包放幾條辣椒.蒜頭帶皮滾水10分鐘放1杯紹興酒

加入要煮較久如雞翅.豬皮......煮20分鐘再加入雞腳......煮10分鐘

                     煙燻滷味                  

平底鍋放入鋁薄紙加入1杯糖.1杯麵粉.半杯茶葉.半杯米

架網架放入滷好的滷味.....煙燻蓋鍋至2分鐘不掀蓋至冷

那起加香油搖晃入味Ps:煙燻時可放甘 蔗
